Mushroom Kalan is a vegetarian stir-fry. As the name suggests, the main ingredient in this dish is mushroom but cabbage is an equally important ingredient. The cabbage adds texture, volume and flavour to the dish. In this recipe, the mushroom and cabbage mixture is deep-fried like pakoras. These pakoras are then stir-fried with a spicy, zesty sauce.The spicy, zesty Mushroom Kalan, brimming with flavours, is hard to resist.

Mushroom Kalan

In a bowl, mix together chopped cabbage, chopped mushrooms, chopped onions, chopped green chillies, all-purpose flour, corn flour, red chilli powder, garam masala powder and water.

Make smalls balls of this mixture and deep-fry them in oil till they turn golden brown. 

In a pan, heat oil and add chopped onions, curry leaves, ginger garlic paste, salt, red chilli powder, garam masala powder, tomato puree, turmeric powder and mix well.

Mix water with corn flour to make a slurry. Pour this slurry in the sauce and mix well.

Add water to the mixture and cook. Now add the deep-fried mushroom fritters to it, garama masala and stir fry.

Transfer the Mushroom kalan to a bowl and garnish with chopped onions, curry leaves, red chilli sauce and green chilli sauce.

Vada Pav is an Indian version of a burger! Mumbai, the economic capital of India, is famous for its spicy street food but Vada Pav is its most famous and popular food. This delicious dish is made from deep-fried batata vada (mashed potatoes coated in a batter) which is stuffed in a pav. It is served with green chillies and dry and spicy garlic chutney.You can eat Vada Pav anytime but in the rainy season, there is nothing better than eating hot Vada Pav with steaming hot adrakwali chai.

Mix Pakoda Platter & Vada Pav

In a mortar and pestle crush some garlic, ginger and green chillies.

In a pan add some oil, mustard seeds, jeera, sliced onions, curry leaves, crushed ginger garlic and green chilli mixture, turmeric powder, red chilli powder and salt.

Add some boiled and mashed potatoes and saute.

Add generous amounts of coriander and mix well.

In a bowl, mix besan with turmeric powder, salt and water.

 Keep the consistency of the batter thick and coat the round potato balls in the batter.

Drop the besan coated potato balls in hot oil and fry them till they turn crisp and brown.

Cut the pav into two; spread some green chutney, tamarind chutney and garlic chutney and stuff the vada in between the two pavs.Cut the pav into two; spread some green chutney, tamarind chutney and garlic chutney and stuff the vada in between the two pavs.  Serve hot vada pav with fried green chillies!

In a bowl mix besan along with rice flour, salt, turmeric powder, red chilli powder, baking soda. Add water and mix this with your hand.

Cut the potatoes, onions into thin rounds and soak in the batter before frying. Use the non-spicy chillies and palak leaves for the pakora platter.

Drop all the pakoras into hot oil and fry till they turn crisp and golden brown.

Sprinkle some chaat masala on the pakoras and serve hot with spicy green chutney!

Dal Moth Ke Samose

In a parat, mix together all-purpose flour, carom seeds, salt, ghee and water and knead a dough. Cover the dough with a wet muslin cloth.

For the stuffing, heat ghee in a pan and add chopped ginger, chopped green chillies, soaked moth beans, salt and water and cook till the dal softens.

Next, add dry mango powder, coriander powder, garam masala and chaat masala to the dal moth, mix well and cook it till the mixture dries. Remove the mixture in a bowl.

Divide the dough into equal portions and make round balls.

Roll the balls into oval shape and cut into half.

Take on part, make a cone, apply water on the edges, add stuffing and fold like a samosa.

Make all samosas in the same way and fry them till crisp.

Serve Dal Moth Samosas with tamarind chutney.

Char a sweet corn on the gas burner. 

In a bowl, mix maize flour, baking soda, baking powder, all-purpose flour. 

Add buttermilk, eggs, melted butter and whisk. 

Add charred corn kernels, lemon zest, lemon juice and mix well. 

Transfer the mixture to a line bread mould. 

Bake the bread in a preheated oven at 190 C for 20 mins. 

Garnish the cornbread with chilli jam, butter cubes, lemon slices and lemon juice.

Makhan Bada

In a bowl, add 2 cups all-purpose flour and 6 tbsp desi ghee. Rub between palms of your hands to form a crumbly texture.

Then add 1/2 tsp baking soda, 3-4 tbsp curd to the mixture & make a soft smooth dough. Let the dough rest for 20 mins.

Divide the dough into equal portions. Flatten the dough ball and press it in the centre using your thumb. 

Fry the badas in hot ghee. 

In another pan, add 2 cups sugar and 1 cup water and boil until you get 1 string chashni.

Add the fried makhan bada in the sugar syrup for 15-20 mins.

Garnish with 1/2 tsp cardamom powder and chopped pistachios and serve.
