Grate the readymade petha.

Heat ghee in a pan and add chopped cashews, chopped almonds, raisins, and grated petha to it and cook till the mixture dries.

Next, add khoya to the mixture.

When the mixture dries, add khus syrup, and rose essence to it.

Take a serving plate, grease it with ghee and pour and spread the barfi mixture on it.

Garnish the barfi with pistachios and serve.

Goan Prawn Crackers 

In a mixer jar, grind together prawns, salt and white pepper powder to make a smooth paste.

Add tapioca flour to the mixer jar and grind again.

Remove this mixture in a bowl, add some tapioca flour, mix well and knead a dough.

Divide the dough in two portions and give them cylindrical shape.

In a pan, heat some water and boil the dough in it.

Remove the dough from water, let it cool, sprinkle some tapioca flour over it and cut the dough into small pieces.

Roll these pieces with the help of a rolling pin and keep on plastic sheet to dry in the sun for 2-3 days. 

Deep-fry in oil and serve hot.

Palak Paneer is made from blanched palak (spinach) and soft paneer (cottage cheese). It’s a highly nutritious dish. It is the best way to make children eat spinach! In one pan heat oil and add cumin seeds, dried red chillies, chopped garlic.

Chop some fresh palak and add to the mix and let it cook.

In this add some palak puree and cover the pan with the lid and let it cook. 

In another pan, heat oil and add chopped onions, cook until brown and then add ginger garlic paste.

Add turmeric powder, chilli powder, salt and chopped tomatoes. Add a cup of tomato puree to this.

Add the pyaaz tamatar masala to the palak mixture.

Add a spoon of butter and some generous amounts of cream.

Sprinkle some kasuri methi powder into the palak and cook.

Finally, add fried pieces of paneer. Fry the paneer, place it in a bowl of water to retain its softness.

Before serving sprinkle some garam masala and serve Palak Paneer with rotis or parathas!

Chhena Poda is an iconic and easy-to-make dessert from Odisha. It is made with chhena (Cottage Cheese). It means roasted or burnt cheese in the Odia language.This baked dessert is made by combining crumbled chhena, jaggery powder, cardamom powder, raisins and cashews. The chef drizzles this dessert with saffron infused sugar syrup and garnishes it with silver leaves and nuts.The burnt aroma of sugar and flavour of cardamom elevates this dessert to a new high.

Crumble the cottage cheese in a bowl, add jaggery powder and mix. 

Add cardamom powder, baking soda, rice flour, milk and mix. 

Add raisins, chopped cashew nuts and mix well. 

Grease the baking tin with butter and line it with banana leaves. Spread the mixture evenly. 

Bake the chhena poda in a preheated oven at 180 C for 25 mins.  

Demould the chhena poda and glaze it with sugar and saffron syrup. 

Garnish the chhena poda with edible silver leaves, cashew nuts and raisins.

In a large platter, add 1 cup multigrain flour, 1 cup cashew nuts powder, 1 tbsp sesame seeds, 1 tsp dried fenugreek leaves, rock salt, 2-3 tbsp ghee and knead it into a soft dough.

Cut small balls from the dough and place them on the baking tray and press them lightly.

Preheat the oven and bake it at 180-190 degrees celsius for 20-25 minutes. 

In a mixer grinder, add 250 ml almond milk, 2 tsp flax seed powder, a pinch of cinnamon powder and 2 tbsp jaggery powder and mix it properly.
