Posto Bori Diye Macher Jhol

In a bowl, marinate the Rohu fish with salt and turmeric powder.

Heat oil in a pan and fry posto bori in it till golden brown. Remove the fried posto bori in a plate.

In the same pan, fry the marinated pieces of fish.

Heat oil in another pan and add nigella seeds, chopped green chillies, cubed potatoes, cubed egg plant and mix well.

Now add salt, coriander powder, red chilli powder, turmeric powder and water to it and cover the pan with lid and let it cook for some time.

Next, add the fried posto bori and fried fish pieces, cover with a lid and let it cook for 2-3 minutes.

Place the fish pieces in a serving bowl and pour the gravy over it. Serve hot.

Sanpiau is a famous rice porridge snack from the Indian state of Mizoram. Usually, fresh veggies or meat or fish are added to the rice porridge for added flavour and texture. Although Sanpiau is from Mizoram, the recipe is said to have originated from Myanmar (Burma). In Myanmar it was called Hysan byok however it became popular in Mizoram and evolved into Sanpiau.Sanpiau is a rice porridge with slightly watery consistency to which non-vegetarian ingredients are added. It is very nutritious and filling.The delicious Sanpiau will definitely make you crave for more.

Boil water in a pot and cook the boneless chicken in it with little bit of salt for 15-20 minutes by covering the pot.

Remove the chicken pieces and in the remaining chicken stock cook the rice. The rice should have consistency of a khichadi.

Heat oil in a pan and fry shredded boiled chicken till it becomes crispy.

Fry the rice papadam in the same oil.

In a bowl, mix together chopped onion, chopped coriander leaves, chilli flakes and pour the hot oil (in which chicken was fried) on it and mix well. 

For serving Sanpiau, take rice porridge in a bowl, put onion, coriander, chilli flakes and oil mixture on top of it, sprinkle some salt, add chicken pieces, garnish with chilli flakes, black pepper powder, fried rice papadams and drizzle some oil.

In a pan, lightly roast 1 cup khoya. set it aside for some time until it cools down.

Then add 1/2 cup roasted white sesame seeds powder, 1 tsp cardamom powder, 1 tbsp chopped pistachio, 1 tsp ashwagandha powder, 3-4 tbsp jaggery powder and mix it properly.

Make laddoos from the mixture and garnish it with mixed dry fruits. Ashwagandha til laddoos are ready to serve.

Balish Mishti is a traditional sweetmeat from Netrokona region of Bangladesh. It is shaped like a pillow and huge in size. A piece of Balish can weigh up to 2 kgs. This sweet has a rich history of 100 years. Similar to traditional Bengali sweets, Balish is also made from chhena and sugar syrup. The soft and luscious Balish Mishti is an amazingly delicious dessert.

Balish Mishti

Heat milk in a pan and let it boil for some time.

Once the milk boils, remove it from the flame and add vinegar to it. The milk will curdle and chhena will be formed.

Put the chhena in a muslin cloth and give it a squeeze. Put this chhena in a bowl of cold water and again squeeze hard to remove excess water.

Now remove the chhena in a parat and knead the chhena till it becomes smooth. 

Next add semolina, baking soda and all-purpose flour to it, mix well, knead again and then cover with a wet muslin cloth.

For making sugar syrup, mix water and sugar in a pan and caramelise the sugar. 

Once the sugar caramelises, add some more sugar and water to it and make sugar syrup. 

Make round balls from chhena and give them a cylindrical shape. 

Add them in sugar syrup and cover the pan with a lid and let Balish cook for 40-45 minutes.

After 45 minutes, place Balish Mishti in a serving plate and pour some sugar syrup on it.

Garnish with saffron and add some rabdi on it. Balish Mishti is ready to serve.

Kerala Style Pepper Chicken (Nadan Kurumulaku Kozhi)

In a pan, roast black pepper, star anise, fennel seeds, cumin seeds, cinnamon stick. Grind the spices to a fine powder. 

Marinate the chicken with this powder, salt, turmeric, and red chilli powder. 

In a pan add coconut oil and add curry leaves, fennel seeds, chopped onions, slit green chillies and ginger garlic paste. 

Add water and then add red chilli powder, coriander powder, and turmeric powder.

Now add chicken and let it cook. 

Add crushed black pepper powder. 

Add fried coconut chips.
