Mutta in Malayalam means egg and mala means string, as the name suggests it a sweet that is in string shape and made from eggs. It’s a sweet that’s made during the wedding festivities of the Mappila community in North Kerala. This dish is simple as it requires minimum ingredients and time.The soft and creamy Mutta Mala is so yummy that it is a must in weddings.

Mutta Mala is a Malabar dessert that is made during the wedding festivities.  Chef Akanksha Khatri brings this traditional wedding dish from the Mappila community to your kitchen.

Take 5 eggs and use two bowls to separate the egg whites and yolks. 

Set aside the egg whites and strain the yolks. 

Next, make sugar syrup by boiling sugar and water until it is at a one string consistency. 

Pour the egg yolks (using a bottle with a hole or a coconut shell ladle with a hole) in a circular manner into the hot syrup to make a netted necklace of yolks.

When the Mutta Mala is ready, gently remove it from the syrup.

In a large bowl, add the sugar and egg yolks. Mix well.

Add the coconut milk. Mix until the sugar has dissolved completely.

Sift the flour through a strainer and slowly add it to the coconut milk and egg mixture. Add in the salt and nutmeg powder. Mix the mixture thoroughly till there are no lumps of flour.

Divide the bebinca batter into 2 equal portions. In one portion, add the sugar caramel. (To give alternate layers a slightly darker shade).

Heat a lightly oiled griddle or frying pan over medium high heat. Pour the plain batter onto the pan using a ladle. Tilt the pan with a circular motion so that the batter coats the surface evenly.

On another pan, pour the other batter using a ladle. Tilt the pan with a circular motion so that the batter coats the surface evenly.

Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.  When done, place it on the cooling racks.

In the meantime, fold in desiccated coconut to whipped cream.   

After the crepes have been cooled down, layer the crepes alternately, along with cream in between. 

Dust it with icing sugar and garnish with toasted coconut.

Kele Ka Halwa is often made as a ‘prasadam’ or ‘naivedhyam’ during religious festivals. Banana is a fruit that is easily available and is rich in potassium, Vitamin B6 and a good source of vitamin C. This Banana Halwa made with bananas, a little caramelised sugar syrup and ghee and garnished with cashews and almonds is a perfect offering to the Gods.

Kele Ka Halwa

Peel and mash 5-6 bananas in a bowl.

Heat 2 tbsp ghee in a pan. Add mashed bananas, 1-2 tbsp sugar and mix well.

In another pan, heat 1 cup sugar add ¼ cup water. Boil the mixture to make a thick caramelised sugar syrup. 

Add the sugar syrup to the banana mixture and cook the halwa until done. 

Switch off the flame and add ¼ tsp cardamom powder, ¼ cup raisins and mix it well.

Garnish the halwa with almonds and cashew nuts and serve.
