Makhani Mac And Cheese

In a pan cook tomatoes, onion, garlic, ginger, green cardamoms, green chilli, bay leaf, cinnamon stick, cashews, Kashmiri red chilli powder and water. Bring it to a boil and then simmer it for around 15-20 minutes or until tomatoes are cooked and mushy.

Once the tomatoes are completely cooked, discard the whole spices and let the mixture cool down completely and grind it into a fine paste. Strain the paste and keep aside.

 Melt butter in a pan and add Kashmiri red chilli powder and saute. 

Add in tomato mixture and cook for 2-3 minutes. Add in salt, mix well and cook for another 4-5 minutes or until the sauce becomes slightly thicker and creamier.

Now add kasuri methi powder and cream to the mixture and mix it well. Add a pinch of sugar and mix it well. Makhani sauce is ready.

Remove the makhani sauce into a bowl and add the boiled pasta to the bowl along with 1 cup cheese and mix them well.

Now transfer the mixture into the baking dish and top with the remaining 1/2 cup cheese. Bake it in a preheated oven at 180°c for about 20-25 minutes.

For garlic butter toast, take butter in a bowl and cream it well. Now add garlic and mix.

Apply the garlic butter on the bread slices and toast it over the griddle/tawa until they are crisp. Cut them into triangles.

Serve makhani mac & cheese with garlic butter toast and garnish with chilli flakes.

Dahi Bhalla Papdi Chaat is a yummy Indian snack. It is in fact a combination of two popular Indian dishes – the Dahi Bhalla (dahi vada) and papdi chaat. In this recipe the soft bhallas made from urad and moong dal are combined with the crunchy papdi and topped with sweet and tangy yogurt and various chutneys.The soft, tender Dahi Bhallas mixed with crunchy papdi and sweet tangy tamarind chutney and spicy green chutney make for a truly satisfying and tasty dish.

Dahi Bhalla Papdi Chaat 

In a pan, dry roast coriander seeds, cumin seeds, dry red chillies, black pepper and fennel. Dry roast all the spices and make a spice mix. 

In another pan add tamarind, jaggery and water and let it boil.

Add the spice mix and let the chutney cook till it thickens.

Soak the Urad dal and Moong dal for 6 hours or overnight. Grind the dals together with very little water to a smooth paste (just like vada batter).

Remove batter into a dish and add shahi jeera.  Whisk the batter for a few minutes till light and fluffy.

Make small balls of the batter and deep fry in medium hot oil.

For soaking, take water in a bowl, add curd, salt, kala namak and hing, mix the ingredients.

 Add the fried bhallas in the seasoned water and let it soak till the bhallas drink the water and settle in the bowl below. 

Remove the bhallas and squeeze out extra water from it, crush them little while pacing on the plate.

In the curd add powdered sugar, kala namak and pour it on the bhalla.

Sprinkle the spice mix on the bhallas.

Add tamarind chutney, green chutney, add papdi in chutney and then add on the plate.

Pour curd again on the bhallas followed by some more chutneys, chopped potatoes, boiled chana, spice mix, more curd, anardana and ginger juliennes.

Afghani Chicken Tikka is a flavourful party starter. Afghani cuisine is full of flavourful and aromatic recipes. Afghani Chicken Tikka is one such dish that has gained popularity the world over.In this recipe, pieces of chicken (tikka) are marinated in hung curd, fresh cream, cardamom powder, pepper powder, lemon juice and ginger-garlic paste. Curd and cream make the chicken pieces extremely tender and juicy. The spices used are very few and fragrant. Flavour comes basically from salt, pepper and lemon juice. The marinated chicken pieces are grilled on a skewer till they are cooked.The creamy, juicy, aromatic Afghani Chicken Tikka is a lip-smacking starter.

Afghani Chicken Tikka

In a bowl add cubes of chicken, lemon juice, ginger garlic paste, salt and black pepper, mix well and keep aside for 25-30 mins. 

Take the stems of coriander and finely chop them along with ginger and green chilli. 

Transfer to a bowl, add grated cheese and knead till the cheese is soft and creamy. Then add hung curd, salt, pepper powder, green cardamom powder and mix well. Lastly add fresh cream and combine. 

Squeeze the water from the chicken and add to the mixture. Coat the chicken pieces well. 

Skewer the chicken pieces onto the metal skewers. Grill on a barbeque open flame. 

Grill for 8-10 minutes. Keep brushing the melted butter/ghee on the meat to keep it moist through the process.

Once the chicken pieces are well-cooked, remove them from the skewers and place them in a bowl.

Add cream, kasuri methi, fresh coriander leaves, green cardamom powder, and lemon juice into the same bowl as the chicken. Toss properly.

Garnish with freshly chopped coriander. Serve hot with laccha pyaaz and lemon wedges.

Cauliflower Rice Biryani is not made with rice instead, the finely grated cauliflower is used like rice. The chef mixes plenty of vegetables like carrots, potatoes, French beans, and green peas with curd. This base of biryani is cooked with grated cauliflower and sprinkled with saffron, nuts and ghee. As per Ayurveda, cauliflower is rich in water and vitamins. It is easy to digest, especially for pitta and Kapha body types. This unique biryani is healthy and delectable.

Cauliflower Rice Biryani

In a bowl, add 1/2 cup chopped green beans, chopped 1/2 chop carrots, 1/2 cup chopped potatoes, 1/2 cup green peas, 1 cup curd, 1 bay leaf, 1/2 tsp caraway seeds, 1 tsp chopped ginger, 2 green chillies, 1-2 green cardamom, 3-4 cloves, 1/2 cinnamon stick, 1-2 tsp rosewater, turmeric powder, rock salt to taste and mix it properly.

In a pan, add 2 tbsp ghee, pour the prepared mixed vegetables into it and let them cook.

Add 1 tsp dried fenugreek leaves, mint leaves, a pinch of javitri powder (mace powder), cardamom powder and mix it properly.

Add salt to taste, 3 cups of grated cauliflower, saffron strands, fried cashew, ghee, and cover the pan with the lid and let it cook for 10 minutes.

Cauliflower rice biryani is now ready. Serve it with raita.

Aam panna and Pineapple panna 

Roast raw mango on open flame till skin becomes soft to remove. add the smoked raw mango in water and remove the burnt skin.

Chop the mango and add in the blender, add black salt, black pepper, roasted cumin seeds, mint and blend all the ingredients together and serve it with chilled ice and cold water. 

For pineapple panna, add pineapple in water and let it soften, add sliced green chillies, ginger, cumin, black pepper, fennel seeds, sugar, red chilli powder, turmeric and let it cook. Remove the softened pineapple, cool it down and add in the blender, add mint and blend all the ingredients together.

Remove the mix in the bowl, add lemon juice, black salt, roasted cumin powder and it's ready to be served with chilled ice and soda or water. 

For Ripe mango Panna chop mangoes and put them in a blender, add mint, green chilli, pepper powder, black salt, roasted cumin powder, lemon juice and blend all the ingredients till it is smooth.  Serve it with cold water and ice.
