Besan Ka Sheera is a unique but healthy recipe. Chef Pankaj Bhadouria makes this sweet dish from her father’s recipe. It is made with besan (Gram Flour), milk and ghee. It is enriched with lots of dry fruits and cardamom powder and ginger powder.This delicious dessert is used as a home remedy for cold and cough in Punjabi households.

Besan ka Sheera

Grind pistachios, almonds and cashew nuts along with cardamom powder, dry ginger powder into a powder.

Heat ghee in a pot and add gram flour. Saute until besan changes colour and becomes fragrant. 

Switch the flame off and add the dry fruit powder. Saute it in the ghee and switch on the flame.

Add water, sugar and milk and mix well. 

Let the sheera simmer for 3 to 4 minutes and serve hot.

Take a tawa and heat ghee on it. Put crushed mixed dry fruits, boondi, mohanthal, Mathura pedha and kaju katli on the tawa, crush everything and mix well.

Now add basundi, mix and cook well.

Khameeri Roti is a soft and spongy flatbread from the Mughal era. It is believed to have been a popular staple in the Mughal era. Khameeri Roti means leavened flatbread. It is made using all-purpose flour, yeast, and milk. The dough made from these ingredients is rested for an hour so that it can rise. When the dough rises because of the yeast, the flatbread is shaped and cooked in a tandoor.The extremely soft and spongy Khameeri Roti is slightly tangy in taste. It goes well with the spicy vegetable curries, mutton korma and dal.

In a bowl add warm water, active dry yeast and sugar, dissolve well and leave to bloom till bubbly. 

For the dough add maida, salt, yeast mixture and knead with milk, leave to rest for 2 hours. 

Then perform the knock back process by adding butter to soften the dough and let it rest for ½ hour rest. 

Portion the dough and create a bigger dough ball than usual. After rolling it apply water on one side and place the wet side down on an upside down tava (ulta tava), once the roti starts developing bubbles hold the tava above the flame so that the roti is in direct contact with the fire. When the roti is cooked it will automatically leave the surface of the tava. 

Serve hot brushed with ghee or butter along with korma.

Butter Chicken originated in the 1950s in Moti Mahal, a restaurant in Delhi. The legend is that there was no place to store the unsold tandoori chicken pieces in the restaurant, so the owner mixed these pieces in a gravy of tomatoes, butter and spices, thus accidentally giving birth to Butter Chicken. Over the years, this recipe has been modified to suit different tastes and palates.This mildly spicy, velvety, creamy gravy, when served with naan or steaming hot rice.

Butter Chicken

In a pan, add some tomatoes, onions, green chillies, dried red chillies, a small piece of mace, cinnamon sticks, bay leaf, garlic, cloves, green cardamom, ginger piece, cashews nuts and saute.

Add water and allow the mixture to boil. Cook the onion-tomato masala till it becomes soft and mashy.

Allow the masala to cool. Remove the whole spices; pour the rest of the mixture in a blender and blend till it becomes a fine paste.

Strain the paste to give it a smooth texture.

Heat oil in a pan and cook the ginger garlic paste and chilli paste in it. Add the makhani gravy to the pan and cook again. 

Add chicken tikka / tandoori chicken pieces to the makhani gravy.

Add butter along with a dash of cream and kasuri methi. Finally add salt, sugar and garnish with fresh coriander.

Soak the bread in the milk and mash it. 

Heat ghee in a kadhai, add sugar and let it melt.

Add soaked bread in the kadhai and cook till golden brown in colour. 

Lastly add cardamom powder and fried almonds & raisins and mix well. 

Turn off the flame and serve hot.
